Yet another Valencian wine maker has lived up to the old adage that “not all that is Cava is Catalan”.
Sierra Norte Winery has presented Pasión Cuvée Brut Nature, which is also organic and vegan. In the next few months it will present two more cavas, a reserve and a rosé. The cultivation area assigned to the DO Cava is in Calderón, a village in Requena, where 30 hectares have been given over to cava grape production.
Pasión Cuvée Brut Nature is the name of the first cava presented by Bodega Sierra Norte, after 20 years focused on wine production. This step has been possible thanks to the acquisition five years ago of 30 hectares of vineyards where the varieties Chardonnay, Macabeo, Xarel-lo, Pinot Noir and Grenache are grown around the company’s new winery at Calderon, near Requena.
This first cava will be complemented by another two in the coming months, as the presentation of Pasión Cuvée Reserva, with more than 15 months of ageing, is planned for October, and in March 2021 Pasión Cuvée Rosado will arrive, elaborated with the Pinot Noir and Garnacha varieties.
This whole new family of cavas is part of the renowned Pasión brand of wines, one of the most successful from Sierra Norte, with the award winning Pasión de Bobal as its main representative.
The cava has a lemon yellow colour with gold hues, clean, fine, abundant and persistent bubbles. It is aromatic and very fruity with peach and citrus notes, very expressive and elegant on the palate with both a fresh and creamy aftertaste. It is expressive, elegant, fresh and creamy at the same time. In its elaboration it has spent nine months ageing in the bottle.
