Bodega Sierra Norte has launched its new cava Pasión Cuvée Reserva Brut Nature, made with high quality grapes, organically grown and with a careful and patient elaboration. This is the second cava of its new brand Pasión Cuvée, which also has a Brut Nature presented last September.
The new Reserve, with a select profile, is made from Chardonnay and Xarel-lo grapes, harvested at night from the best plots that the winery has in the district of Calderón, in Requena, to ensure excellent organoleptic characteristics. The cava is made only with the flower must, the fruit of a first, gentle pressing, which ferments at a controlled temperature of no more than 15º to preserve all its nuances. The second fermentation is carried out in the bottle itself, as well as the ageing, for a period of more than 15 months.
The result is a pale gold coloured cava with a fine, abundant, creamy and well integrated bubble. The selected varietals provide aromas of white fruit, with a clear presence of apple and pear, and hints of toast and dried fruit. In the mouth it seduces, because it is fresh, with a very pleasant texture and a persistent finish, with touches of butter and toasted aromas that its long ageing in rhyme brings.
Pasión Cuvée Reserva Brut Nature is an organic Valencian cava ideal for those who like to enjoy a complete meal accompanied by cava. In this case, it is perfect with rice, fish, seafood and white meat.
A rosé cava will complete the Pasión Cuvée family in spring
The Pasión Cuvée family of cavas will be completed next spring with the presentation of a rosé cava, which is already in the maturing phase.
These cavas are the first to be launched on the market by the Valencian winery Bodega Sierra Norte, after 20 years of producing excellent wines, such as its renowned Pasión de Bobal, Mariluna and Bercial, among others.
The production of cava was a highly desired step by the winery, which finally came about after the acquisition five years ago of the Casa Calderón estate, where they have 30 hectares of vineyards attached to the Cava Designation of Origin, all in the province of Requena. These vineyards are cultivated following the winery’s philosophy, limiting production to achieve the greatest expression of each varietal and following organic farming criteria.
